How to Make Miso Salmon (Recipe) 味噌サーモンの作り方 (レシピ)
Ingredients
- Salmon2
- Miso2 tbsp
- Sake1 tbsp
- Mirin1 tbsp
- Soy sauce1 tbsp
- Toasted sesame oil¼ tsp
- Sesame seed · toasted½ tsp
- Scallion1
Instructions
- Check the salmon for bones and scales, then cut into individual portions of about 6 oz / 170 g each if not already cut.
- Mix the miso, sake, mirin, soy sauce and sesame oil in a bowl or tray. Place the salmon skin side up in the marinade, coat it well, cover and refrigerate for 1-2 hours (up to 3 hours for cuts thicker than 1 inch / 2.5 cm).
- Remove the salmon from the marinade and scrape off all excess, as miso burns easily.
- Preheat the broiler to High (550°F / 290°C) with the rack in the centre, about 9 inches (23 cm) from the heating element, for 5 minutes.
- Line a baking sheet with foil and oil it. Place the salmon skin side down on the sheet.
- Broil for about 10-13 minutes, without flipping, until the thickest part reaches 125-130°F (52-54°C). For medium-rare, stop at 120°F (49°C).
- Alternatively, to bake: preheat the oven to 425°F (220°C) with the rack in the centre, and line a sheet with parchment. Place the salmon skin side down and bake for about 18-20 minutes, without flipping, until the thickest part reaches 125-130°F (52-54°C).
- Remove the salmon when it flakes easily. For a golden finish, underbake slightly, then broil on High for about 3 minutes until browned.
- Top with the sesame seeds and sliced green onion, and serve.
