How to make NIGERIAN STEW //Nigerian Chicken Stew
Ingredients
- Chicken1200 g
- Onion1
- Garlic2
- Ginger7 g
- Salt1 ¼ tsp
- Curry · powder1 ½ tsp
- Thyme3 tsp
- Stock cube2 ½
- Bell pepper5
- Tomato9
- Scotch bonnet1 handful
- Oil for frying the meat1 cup
- Boiled down stew base
- Chicken stock1 cup
Instructions
- Clean the chicken well and place it in a deep pot. Season with the chopped onion, garlic, ginger, salt, thyme, curry powder and chicken seasoning cubes.
- Mix the seasoning, cover the pot and let the chicken steam in its own juices on low heat.
- After 10 minutes, add the water, cover and cook for another 10 minutes, or until the chicken is about 80% done.
- Turn off the heat, wait 10 minutes, then separate the meat from the stock.
- Blend the tomatoes, bell peppers, scotch bonnet peppers and onions until smooth, adding the tomatoes first.
- Put the blended mixture in a pot and reduce it over medium heat, without stirring while it boils.
- Boil for about 30 minutes, until most of the water has evaporated.
- Meanwhile, heat the oil in a wide pan and fry the chicken. You can also grill or air-fry it instead.
- After frying, pour off most of the oil, return the pan to heat and add the boiled-down pepper mix.
- Season with curry powder, thyme and chicken seasoning cube, and fry for about 10 minutes on medium heat, covering the pan most of the way if it splashes.
- When oil rises to the top, add the chicken stock and mix, then add the fried chicken. Adjust the seasoning, and add more stock or water if too thick.
- Simmer for about 10 minutes on low to medium heat.
