How To Make Oven Roasted Zucchini Parmigiana
Ingredients
- Zucchini · sliced4–5
- Marinara sauce3–5 cups
- Mozzarella cheese · shredded1 lb
- Parmesan cheese · grated½ cups
- Olive oil¼ cups
- Salt
- Black pepper
- Basil1
Instructions
- Slice the zucchini into 1/4-inch strips and lay them on a baking sheet lined with parchment. Coat with olive oil and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper, divided. Roast at 375°F for 20 to 30 minutes.
- Spread a thick layer of marinara in a 3 to 4 quart baking dish. Add a layer of roasted zucchini, then mozzarella, dividing the mozzarella equally between layers, and grate some Parmigiano Reggiano over it. Top with more sauce. Repeat for the remaining layers.
- Bake for 20 minutes until bubbly. If you add mozzarella to the top layer, add it at the end. Optionally, broil carefully for 1 to 2 minutes to golden the top.
- Let it rest for 20 to 30 minutes before serving so it settles and firms up.
