  1. Mix the sauce ingredients in a small bowl, taste, and adjust the sweet, salty and sour balance to your liking. Set aside.
  2. Soak the noodles in a large bowl of very hot water for about 20 minutes, until opaque and pliable but still firmer than al dente.
  3. Heat half the oil in a large wok, deep wide skillet or Dutch oven.
  4. Fry the garlic and shallot until golden.
  5. Add the eggs, let them set for 15 seconds, then break them up with a wooden spoon into white and yolk bits.
  6. Add the remaining oil and heat it, then add the shrimp and cook for 60 seconds until the edges just turn pink.
  7. When the shrimp is about half cooked, add the dried shrimp (if using), chili flakes, drained noodles and sauce.
  8. Toss quickly with tongs to coat the noodles in sauce, then keep cooking and tossing for about 5 more minutes until the noodles are tender.
  9. Fold in the chives, half the bean sprouts and half the peanuts.
  10. Cook a couple more minutes until the sauce is absorbed and the sprouts and chives are wilted.
  11. Plate topped with the remaining sprouts and peanuts, and serve with lime wedges.
