How to Make PASTA BROCCOLI Like an Italian

How to Make PASTA BROCCOLI Like an Italian

By Vincenzo's Plate · 25 min

Ingredients

Instructions

  1. Trim the end off the broccoli stem and set it aside. Cut the rest of the stem into one piece, then trim the florets off. Cut the stem into small pieces so it cooks at the same time as the florets.
  2. Bring 5 liters of water to a boil in a large pot and add 1 tablespoon of rock salt.
  3. Add the broccoli to the boiling water and cook for about 5 minutes.
  4. Put a medium pan over low heat and add a generous amount of extra virgin olive oil. Add the crushed garlic and let it simmer. Once it starts to brown, add 1–2 tablespoons of water to stop it burning.
  5. After the broccoli has cooked for about 5 minutes, lift it out with a strainer into the pan. Gently combine it with the oil and garlic, keeping the heat very low. Some pieces should be crushed and others left whole.
  6. Bring the pot of water back to the boil and cook the spaghetti according to the packet instructions.
  7. Season the broccoli with salt and pepper and stir through (add plenty of pepper if you like it).
  8. Drain the pasta with a strainer, add it to the pan and mix gently but thoroughly, taking care not to break up all the broccoli. Add half a cup of pasta water and mix well to create a creamy sauce.
  9. Add a generous sprinkle of grated pecorino (or parmesan) and mix through.
