How to Make PASTA & PEAS Like an Italian
Ingredients
- Snow pea · frozen800 g
- Pasta shell300 g
- Onion½
- Pecorino cheese3 tbsp
- Mint1 bunch
- Salt1 tbsp
- Black pepper
- Extra virgin olive oil4 tbsp
Instructions
- Peel the pea pods one by one and pile the peas into a large bowl.
- Finely chop the half onion and set it aside.
- Heat a large frying pan over medium-low heat. Add 4 tablespoons of extra virgin olive oil and, once warm, add the chopped onion.
- Sauté the onion for 5 minutes, until soft and golden brown.
- Add the peas to the pan with the onion and oil, and stir for about 6 minutes.
- Bring 5 litres of water to the boil in a large pot. Once boiling, add 1 tablespoon of rock salt.
- Boil the pasta for half the time given on the packet (about 6 minutes for the author's pasta). Stir briefly so it doesn't stick.
- While the pasta boils, keep stirring the peas. Pull the mint leaves off the stems and add them to the pan, stirring through.
- Reserve some pasta water. Drain the pasta and add it to the pan with the peas, then add a few scoops of pasta water until the pasta is half covered.
- Stir the pasta and peas continuously for 6 minutes to form a creamy sauce.
- Once the pasta is cooked, sprinkle with pecorino cheese and more fresh mint, then toss to make the sauce creamier.
