How to Make PENNE ALLA VODKA Like an Italian
Ingredients
- Penne300 g
- Tomato · peeled2 cans
- Cream200 g
- Bacon200 g
- Extra virgin olive oil
- Basil
- Onion½
- Pecorino cheese3
- Salt1 tbsp
- Vodka100 ml
Instructions
- Bring 5 L of water to a boil in a large pot.
- Cut the pancetta into small strips, leaving some fat on each piece.
- On low heat, add 4 tbsp of EVOO to a frying pan, then add the chopped onion.
- Add the pancetta and cook for about 5-10 minutes, until the onion turns golden and the pancetta is crispy.
- Meanwhile, put the peeled tomatoes in a large bowl, add a pinch of salt and pepper, and crush them gently by hand or with a masher.
- Pour the vodka into the pan and cook with the pancetta and onion for 2-3 minutes.
- Add the crushed tomatoes to the pan and stir slowly with a wooden spoon. Simmer on medium-low heat for at least 15-20 minutes.
- Tear the basil leaves by hand and add them to the pan. The sauce should start to thicken slowly.
- Add a small amount of cream until the sauce turns pink.
- Cook the penne for the time on the packet. Shortly before it is ready, scoop out a mug of pasta water and set it aside.
- Drain the pasta and add it to the sauce on medium-low heat, stirring gently.
- Add half a mug of pasta water and mix until every penne is coated in the sauce.
- Top with grated pecorino to taste, toss again, and serve.
