Ingredients

Instructions

  1. Thinly slice the beef across the grain and marinate it with the soy sauce, oyster sauce, cornstarch, liquid Maggi seasoning and black pepper while you prep the rest.
  2. Chop the bell peppers and onion, mince the garlic and ginger, and slice the chilies.
  3. Mix the stir-fry sauce ingredients: 2 tablespoons oyster sauce, 1 tablespoon dark soy sauce, 1 tablespoon regular soy sauce, 1 tablespoon rice cooking wine, 1 teaspoon brown sugar or honey, 1/2 cup water and 2 teaspoons cornstarch. Mix well and set aside.
  4. Heat a wok or large pan until very hot, add a drizzle of oil and sear the beef in batches without crowding the pan, until browned. Set the beef aside.
  5. Add a little more oil if needed and fry the garlic and ginger for about 1 minute.
  6. Add the onion, chilies and bell peppers and stir-fry for a few minutes until slightly softened but still crisp.
  7. Return the beef to the pan, pour in the sauce and stir until it thickens and coats the beef and vegetables. Serve hot.
