Ingredients

Instructions

  1. Put the chocolate chips in a medium bowl and set aside.
  2. Heat the cream in a small saucepan over medium heat until it just starts to simmer gently. Add the cayenne and cinnamon, then take the pan off the heat.
  3. Pour the hot cream over the chocolate and leave for 2 to 3 minutes to soften. Whisk until smooth and fully melted. Cover and keep warm.
  4. Fill a 12-inch cast iron skillet with 1½ inches of canola oil and heat over medium until it reaches 370°F (188°C). Line a baking sheet with 2 layers of paper towels and set a wire rack on top.
  5. In a small stainless steel saucepan, combine the water, milk, 1 tablespoon sugar, salt, butter, and vanilla bean seeds and pod. Bring to a boil over medium heat.
  6. Once boiling, remove the vanilla pod, add the flour all at once, and reduce heat to medium-low. Stir with a wooden spoon for about 5 minutes, until the dough forms a ball and no longer sticks to the pan.
  7. Transfer the dough to a stand mixer bowl fitted with the paddle and let cool for 5 minutes.
  8. With the mixer on medium, add the eggs one at a time, beating until each is fully incorporated and scraping down the bowl as needed. The dough should be smooth and creamy, like thick custard.
  9. Transfer the dough to a piping bag fitted with a 6B open star tip and rest for 5 minutes.
  10. Mix the remaining ½ cup sugar with the cinnamon in a medium bowl.
  11. Working in batches of about 4, pipe 5 to 6-inch lengths of dough into the hot oil, snipping the dough off with scissors. Cook, turning often, for 3 to 4 minutes, until golden brown all over. Drain on the wire rack for about 15 seconds, then toss in cinnamon sugar until coated. Let the oil return to temperature between batches.
  12. Serve immediately with the chocolate sauce for dipping.
