Preparación
- Make the sauce: melt the butter in a saucepan over low heat. Add the flour and stir for 4 to 5 minutes until it turns brown. Gradually add 1 cup of water, stirring until smooth.
- Add the sugar, mirin, ketchup, Worcestershire sauce, chicken bouillon powder and black pepper to taste. Mix well, bring to a boil and simmer for 3 more minutes. Take off the heat and keep warm.
- Finely chop the garlic, carrot and onion. In a small bowl, mix the fried rice sauce ingredients.
- Beat the eggs in a bowl with a pinch of salt. Set aside.
- Heat 1 tablespoon of oil in a large wok or pan over medium-high heat. Add the ground beef and break it up, cooking 2 to 3 minutes until it starts to brown. Add the garlic, carrot, onion and sauce, and stir-fry 2 to 3 minutes until the onion is translucent.
- Raise the heat to high, add the rice and break it up. Stir-fry for 3 to 4 minutes. Season generously with salt and black pepder, then mix once more.
- Pack the fried rice into small bowls, press down gently, then invert each onto a serving plate. Keep warm.
- Heat 1 tablespoon of oil in a medium pan over medium heat. When very hot, pour in half the beaten egg and cook for 1 minute, until the base is set but the top is still slightly runny. Slide it over one portion of rice. Repeat with the remaining egg.
- Pour half the sauce over each omelette, garnish with cream and parsley if using, and serve at once.
