How to Make Perfect Teriyaki Cod Fish in 25 Minutes
Ingredients
- Cod150 g
- Soy sauce8 tsp
- Mirin8 tsp
- Cornstarch3 tbsp
- Vegetable oil
- Scallion · finely chopped
- Sesame seed · toasted
- Sake2 tbsp
- Sugar2 tsp
- Dashi2 tbsp
- Honey1 tsp
Instructions
- Cut the cod into large bite-sized pieces, put them in a bag with 2 tsp soy sauce and 2 tsp mirin, and marinate in the fridge for 10 minutes.
- Start heating the oil to 180 °C for shallow frying (or medium heat for regular pan frying). Meanwhile, spread 3 tbsp cornstarch on a plate and coat the cod pieces generously.
- Fry the coated cod in the hot oil for 2 minutes per side, until golden and crispy.
- Lift the cod out and drain on a wire rack.
- In a separate pan, combine 2 tbsp soy sauce, 2 tbsp mirin, 2 tbsp sake, 2 tsp sugar, 2 tbsp dashi (optional) and 1 tsp honey. Mix well and heat over medium-high.
- When the sauce bubbles, add the fried cod and stir gently to coat. Cook until the sauce thickens to a syrupy consistency, then remove from the heat.
- Serve, spooning any leftover sauce over the top, and garnish with chopped green onion and sesame seeds.
