Ingredients

Instructions

  1. Freeze the flour and baking powder in a bowl for 10 to 15 minutes to chill.
  2. Dice very cold butter into cubes about 1/3 inch (1 cm) across.
  3. Add the butter to the dry ingredients and toss with your fingertips or a fork to coat each cube in flour. Work the butter into smaller bits until the largest pieces are about half the size of a pea and the smallest are crumb-like.
  4. Add ice water one tablespoon at a time, mixing gently, just until the dough forms a loose ball.
  5. Wrap tightly in plastic wrap and refrigerate for 30 minutes.
  6. Roll the dough on a floured surface with a floured pin into a 12-inch circle for a 9-inch pie pan, turning often to keep its shape.
  7. Lift the dough over the pin, transfer it to the pie pan, and ease it into the corners without pressing. Fold the edges up and crimp them with your fingers.
