Ingredients

Instructions

  1. Cut the wings into two pieces and put them in a mixing bowl.
  2. Blend the onion, 80 ml of lemon and lime juice, the garlic, the coriander, 2 tbsp of pomegranate molasses, the olive oil, the kosher salt, the black pepper and the chilli flakes on high until you have a semi-liquid paste.
  3. Add the marinade to the wings and mix well to coat. Cover and marinate in the fridge for at least 2 hours.
  4. Take the wings out of the fridge 30 minutes before cooking and preheat the oven to 180 (degrees as written in the text; unit not stated).
  5. Line a baking tray with foil, arrange the wings on it and remove any excess marinade. Bake for 25 minutes.
  6. Meanwhile, mix 1 tbsp of pomegranate molasses with the juice of one lemon, season with salt and pepper, and stir until slightly syrupy; add more molasses if it is too runny.
  7. Brush each wing with the marinade from the bowl, then return to the oven for 10 minutes or until the glaze sets.
  8. Arrange on a platter, sprinkle with chopped coriander and drizzle with pomegranate molasses.
