How to make pomegranate juice

Ingredients

Instructions

  1. Rinse the pomegranates under running water. Cut off the crown and about ¼ inch from the bottom so each sits stable.
  2. Score the skin and divide each pomegranate into 4 sections, then pull them apart.
  3. Loosen the arils by hand over a bowl, discarding any pale membrane. Alternatively, work one section at a time under clean water, then drain and remove the rinds.
  4. Put the arils in a blender with the salt and, if using, the juice of a medium lemon. Pulse 10 to 15 seconds, just until the juice is released and the seeds stay mostly whole.
  5. Strain through a fine mesh strainer or thin cheesecloth set over a large bowl, pressing the pulp with the back of a spoon to extract all the juice.
  6. Drink immediately, refrigerate for later use, or dilute with seltzer or plain water. Mix with other juices if too strong.
