Ingredients

Instructions

  1. Place each cutlet between two sheets of baking paper and flatten it with the flat side of a meat mallet until thin and wide.
  2. Warm a generous amount of oil in a pan over medium heat.
  3. Mix the breadcrumbs, pecorino (or Parmigiano) and parsley in a bowl.
  4. Season that mixture with a pinch of salt and plenty of pepper.
  5. Whisk the egg with lemon juice in a separate bowl.
  6. Spread the flour evenly in a wide bowl.
  7. Dip each cutlet in flour, then egg, then the breadcrumb mixture, adding extra crumbs on top so there is a thick layer.
  8. Shallow fry each cutlet for a few minutes until golden brown, then turn and cook the other side the same way.
  9. Drain each cutlet on a plate lined with kitchen paper, covering it with another sheet to absorb the oil.
  10. Repeat with the remaining cutlets.
