How To Make Pressure Cooker Pork Belly (Recipe) プレッシャークッカーで作る角煮の作り方 (レシピ)
Ingredients
- Scallion3
- Ginger1
- Vegetable oil2 tbsp
- Pork belly2 lb
- Egg4
- Shichimi togarashi
- Sake¼ cups
- Mirin½ cups
- Soy sauce½ cups
- Sugar¼ cups
Instructions
- Sear the pork belly pieces in 1 tablespoon of neutral oil over high heat on both sides, in batches if needed, then return all the pork to the pot.
- Add enough water to just cover the meat, plus the green onion pieces and sliced ginger. Lock the lid and set to high pressure for 35 minutes on the Instant Pot (or about 30 minutes on high heat on a stovetop pressure cooker, keeping high pressure at low heat).
- When cooking ends, release the pressure either quickly or naturally (about 15 minutes), then unlock the lid. Drain the liquid, discard the onion and ginger, and rinse the pork under warm water.
- Return the pork to the pot and add ½ cup water, ¼ cup sake, ½ cup mirin, ½ cup soy sauce and ¼ cup sugar, and stir to mix. Add the peeled hard- or soft-boiled eggs.
- Bring to a simmer over high heat for about 1 minute to cook off the alcohol, then turn off the sauté function, lock the lid and cook at high pressure for 10 minutes for sliced pork or 20 minutes for cubes.
- When cooking ends, release the pressure by venting until the float valve drops, then unlock the lid. If you like, simmer on sauté over low heat until the liquid has reduced by half.
- Serve the rice in bowls, spoon sauce over it, then top with the pork and egg. Add more sauce and sprinkle with shichimi togarashi if you like heat.
