Ingredients
- Onion · thinly sliced1 cup
- Olive oil2 tsp
- Bay leaf1
- Pumpkin1 lb
- Penne½ lb
- Garlic · minced1 tsp
- Thyme½ tsp
- Sage · ground¼ tsp
- Chili flake · flakes¼ tsp
- Vermouth¼ cups
- Salt½ tsp
- Parmesan cheese · grated¼ cups
- Heavy cream2 tbsp
- Walnut · toasted½ cups
- Arugula½ cups
Instructions
- Heat the olive oil in a large skillet over high heat, then add the onion and bay leaf and lower the heat to low. Add a pinch of salt, cover, and cook for 30 minutes, stirring once halfway through.
- Cut the pumpkin into wedges, place them cut side up on a plate, and microwave for about 5 minutes until soft. Let them cool.
- Bring a large pot of water to a boil for the pasta.
- When the onions are well caramelized, add the garlic, thyme, sage, red pepper flakes and vermouth (or wine or broth) and stir.
- Peel the pumpkin and cut it into 1-inch chunks (about 2 cups). Add them to the onion mixture with the salt and simmer uncovered until the pasta is cooked.
- Before draining the pasta, scoop out 1 cup of the cooking water and set it aside.
- Drain the pasta and add it to the pumpkin and onion mixture with 3/4 cup of the pasta water.
- Stir in the Parmesan, then the cream if using.
- Cook, stirring, until most of the liquid is absorbed and the sauce is thick and clings to the pasta.
- Top with toasted walnuts and greens, tossed in at the last minute.
