How To Make Real New York Deli Shrimp Salad

- Shrimp1 ½ lb
- Baking soda½ tsp
- Salt½ tsp
- Lemon1 tbsp + 2 oz
- Old Bay seasoning2 ½ tsp
- Celery · finely diced½ cups
- Red onion · finely diced¼ cups
- Dill1 tbsp
- Mayonnaise¾ cups
- Celery seed1 tsp
- Dijon mustard2 tsp
- Black pepper
Instructions
- Toss the shrimp with the baking soda, salt and Old Bay seasoning, then let them sit for 15 to 20 minutes.
- Meanwhile, make the sauce and set it aside. Fill a large bowl with ice water for shocking the shrimp.
- Add the water and lemon juice to a large pot and bring to a boil.
- Add the shrimp and cook for 90 seconds, or until just slightly opaque. Move them straight into the ice water to stop the cooking.
- Drain the shrimp in a colander and pat dry with paper towels.
- In a large bowl, combine all the sauce ingredients. Taste and adjust the salt and pepper if needed.
- Add the shrimp to the sauce and coat well. Cover and refrigerate at least 2 hours, preferably overnight.
- Before serving, drain the salad in a colander to remove excess liquid for a drier result.
