How to Make SALMON PASTA Like an Italian
Ingredients
- Penne300 g
- Salmon300 g
- Mascarpone cheese2–3 tbsp
- Garlic1
- Caper1 tbsp
- Parsley
- Extra virgin olive oil
- Lemon
- Dried chili½–1 tsp
Instructions
- Remove the skin from the salmon and cut it into medium cubes.
- Bring 5 litres of water to a boil in a large pot over medium heat, adding rock salt before the pasta.
- Heat 3 tablespoons (or a drizzle) of extra virgin olive oil in a pan over medium heat.
- Crush or thinly slice the garlic clove, add it to the pan and cook on medium-low for about 20 seconds.
- Add the salmon and turn gently so all sides cook.
- Add the chilli, capers and a sprinkle of chopped parsley.
- Stir gently and cook through for about 5 to 7 minutes.
- Cut the lemon in half and squeeze in the juice of one half, adding more to taste; add the lemon zest, then the remaining juice, and mix well.
- Break up about half of the salmon pieces with a fork so they shred, choosing pieces that have already started to break down.
- Cook the penne in the boiling water, then reserve about half a mug of pasta water.
- Add the reserved pasta water to the pan and let it gently simmer, then drain the pasta and add it to the pan.
- Lower the heat, stir in 3 heaped tablespoons of mascarpone until melted, then add more parsley and toss the pan to create a creamy sauce.
