Instructions
- Bring a large pot of water to a boil for the noodles. Keep it simmering over low heat once boiling.
- Add 3 cups water and the 2 dashi packets to a large pot and bring to a boil over medium heat, covered. Reduce to low and cook covered for 2–3 minutes. Squeeze and discard the dashi packets.
- Add 2 Tbsp soy sauce, 1½ Tbsp mirin, 1 tsp sugar and ¼ tsp Diamond Crystal kosher salt (half that for table salt) to the broth and stir. Turn off the heat, cover and set aside.
- Prepare the vegetables: cut the bok choy in half lengthwise, then into 2-inch (5 cm) pieces, keeping the tough white parts separate from the leafy parts. Peel the carrot and slice it thinly into rounds with the white parts. Remove the shiitake stems and set the caps with the leafy greens. Thinly slice the kamaboko and set it with the leafy greens. Chop the mitsuba and green onion and set aside for
- Separate the somen bundles' wrapping ribbons and remove them.
- Add the white bok choy parts and carrot to the simmering broth and cook covered for 4–5 minutes over medium heat.
- Add the shiitake, kamaboko and leafy bok choy to the broth and cook covered for 2 minutes. Meanwhile, cook the noodles.
- Cook the somen in boiling water for 60 seconds (about 30 seconds less than the package time of 1½–2 minutes), stirring occasionally so they do not stick. Drain into a sieve, rinse under cold running water until cool enough to handle, then knead to remove the oil and drain well.
- Remove the kamaboko and shiitake if you want them as a topping. Slowly drizzle the beaten egg into the simmering broth, guiding it from the edge of the bowl with chopsticks, then add the noodles and let them warm while the egg sets.
- Top the noodles with the kamaboko and shiitake, then sprinkle with the green onion, mitsuba and ½ tsp toasted white sesame seeds. Divide the noodles and broth into bowls and serve.
