How to Make Spanakopita | Hilah Cooking
Ingredients
- Olive oil½
- Onion · minced2
- Salt¼ tsp
- Basil1 tsp
- Oregano1 tsp
- Spinach · chopped coarsely2 ½ lb
- Garlic · minced5 cloves
- Flour3 tbsp
- Feta cheese1 lb
- Cottage cheese1
- Black pepper1 tbsp
- Filo pastry1 lb
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, sauté the onion in 2 tablespoons of the oil over medium heat for about 5 minutes, until slightly translucent.
- Add the salt, basil and oregano and stir.
- Add the spinach and garlic, adding the spinach a handful at a time and stirring until it wilts before adding more.
- When all the spinach has wilted, sprinkle in the flour, stir well and reduce the heat to low, letting the filling simmer.
- While the spinach simmers, layer phyllo sheets in the baking pan, brushing the bottom with a little of the remaining oil and oiling each sheet. Layer about 10 sheets.
- When the spinach is thick, stir in the feta, ricotta or cottage cheese and black pepper, then spread the filling evenly over the phyllo.
- Top with more phyllo sheets, oiling each one, using about three-quarters of the package.
- Tuck the overhanging edges of phyllo into the pan and brush generously with oil, especially around the edges.
- Before baking, cut through all layers into 12 squares with a sharp knife.
- Bake for about 45 minutes, until golden and crisp.
- Let cool for 10 minutes or longer before serving.
