How to Make Steak with Fried Oysters | Hilah Cooking
Ingredients
- Butter · softened3 tbsp
- Olive oil1 tbsp
- Basil · minced1 tbsp
- Lemon½ tsp
- Honey½ tsp
- Salt
- Black pepper
- Beef2-1/2 pound
- Oyster6
- Egg1
- Dash Tabasco
- Panko½ cups
- Cayenne pepper¼ tsp
Instructions
- Make the basil butter: mix softened butter, olive oil, basil, lemon zest, honey and a pinch of salt and pepper until well combined. Taste and adjust the seasoning. Shape into a log on plastic wrap, wrap and refrigerate for at least 30 minutes to firm up.
- Drain the oysters and keep the liquor. Beat the egg with the liquor and Tabasco. Mix the crumbs with the cayenne. Dip the oysters in egg, then roll them in the crumbs. Refrigerate for 30 minutes to 2 hours.
- Shortly before eating, take the steaks out of the fridge, trim excess fat and season with salt and pepper.
- Heat a cast iron skillet over high heat for one minute.
- Add the steaks and cook for 4 minutes, then turn and cook for another 4 minutes for medium-rare.
- Heat 1/2 inch of vegetable oil in a skillet to 375 °F, or until a breadcrumb sizzles when dropped in.
- When the steaks are done, move them to plates. Add half the basil butter to the hot skillet, then pour the melted butter and drippings over the steaks. Rest them and keep warm.
- Fry the oysters for 1 minute per side, or until golden and crisp. Drain briefly on paper towel.
- Top each steak with another pat of basil butter and three oysters. Serve with lemon wedges.
