How To Make The Best Clams Casino
Ingredients
- Clam2 dozen + ¼ cups + ¼ cups
- White wine¼ cups
- Butter5 tbsp
- Lemon1
- Bacon3
- Breadcrumb½ cups
- Oregano · dried½ tsp
- Chili flake · crushed flakes¼ tsp
- Parsley3 tbsp
- Garlic3 cloves
- Bell pepper½
- Salt
- Chicken stock½ cups
Instructions
- Bake the clams at 425°F until they partly open, only a few minutes. Move the oven rack to the second-highest level.
- Open the clams carefully with a butter knife and discard the top shell. Loosen the clam and set it back in one side of the shell.
- In a large pan over medium heat, cook the bacon until partly cooked, about 3–5 minutes. Set the bacon aside and reserve 3 tablespoons of the fat.
- Add the bell pepper to the pan and cook for 2 minutes. Add the garlic and red pepper flakes and cook until fragrant, about 60 seconds.
- Take the pan off the heat and add the remaining seasoning and breadcrumb ingredients. Mix well, taste and adjust the salt. If the mixture is too dry, add a little more clam juice.
- Pack each clam with the breadcrumb mixture and top each with a piece of bacon.
- Place the clams on a baking sheet. Pour the wine and clam juice around them and sprinkle the liquid with up to 2 tablespoons of the remaining breadcrumbs.
- Top each clam with a small piece of butter (3 tablespoons in total) and broil for 5–7 minutes, until well browned, watching closely to avoid burning.
- Arrange the clams on a large platter. Whisk 2 tablespoons of butter into the pan juices and pour around the clams. Serve with lemon wedges.
