Instructions

  1. Melt the butter and set aside. Mix the warm water and sugar, cover and leave for 10 minutes until frothy, which shows the yeast is active.
  2. Sift the flour, measure 4 cups, sift again, then combine with the salt, powdered milk and nutmeg and whisk together.
  3. Add the whisked egg, warm whole milk and yeast mixture to the dry ingredients and mix to a sticky dough. While still mixing, drizzle in the melted butter and keep mixing for 10 more minutes.
  4. Turn the dough onto a floured surface and knead for 10 minutes until the gluten is developed.
  5. Place the dough in a buttered bowl, cover and proof in a warm place for 60 minutes.
  6. Deflate the dough, flatten it into a square about 1½ inches thick, and divide into 12 pieces. Shape each into a roll or ball and place on a buttered, floured sheet pan. Proof again for 45 minutes.
  7. Preheat the oven to 350°F. Place a small pan of water in the oven to create steam.
  8. Bake the rolls for 20 minutes, then brush them with clarified or regular butter.
