Ingredients

Instructions

  1. Use a hand blender to gently blend the peeled tomatoes in their can, then set aside.
  2. Chop the onion, celery and carrot into small pieces and put them in a blender.
  3. Add 7 to 8 tablespoons of extra virgin olive oil and a splash of water to the blender and blend until creamy; add a little more oil if it is too thick and chunky.
  4. Heat a cast iron pot over medium heat, add 2 tablespoons of olive oil, then add the blended vegetables, stir, cover and cook for 10 minutes.
  5. After 3 minutes, check the pot; if it looks dry, add a splash of water and stir.
  6. When the vegetables have cooked for 10 minutes, add the blended tomatoes and stir well with a wooden spoon.
  7. Cover and simmer for 1 hour, stirring every 10 to 20 minutes so it does not stick to the bottom.
  8. After 1 hour, uncover, stir, season with salt and pepper, and stir again.
  9. Take the pot off the heat, tear the basil leaves by hand, stir them in and mix once more.
