Ingredients

Instructions

  1. In a large pot, combine the chicken pieces, chopped onion, crushed garlic, thyme, curry powder, salt and crushed bouillon cubes. Mix well, cover, and steam on low heat for 5 minutes.
  2. Add a little more water and boil over medium heat for another 5-10 minutes, until the chicken is slightly tender.
  3. Remove the chicken from the broth and set it aside. Strain the broth and reserve it for cooking the rice.
  4. Rinse the rice several times until the water runs clear.
  5. Add the rice to the reserved broth, adding water if there is not enough. Add a pinch of salt, white pepper and curry powder. Optionally, add large chunks of bell pepper.
  6. Cook the rice for about 20 minutes.
  7. Heat oil in a deep pan, or lightly spray the chicken with oil for an air fryer. Fry the chicken until golden brown and fully cooked, then drain on paper towels. Alternatively, air fry at the setting used for golden brown.
  8. Peel and dice the carrot. Finely chop the green bell pepper, green beans and green onions. Thaw and drain the peas and sweet corn if frozen.
  9. Wash, devein and dry the shrimp. Season with salt, chicken seasoning and onion powder. Heat a little oil in a wide pan and fry the shrimp on both sides for 3-4 minutes, until pink and firm. Set aside.
  10. In a pot, cook the beef liver with salt, chicken seasoning cubes and water until tender. Cut into small pieces and fry briefly in a little oil. Set aside.
  11. In a large pan or wok with oil, stir-fry the carrot and green beans for about 1 minute, then add the peas and sweet corn.
  12. Season with crushed bouillon cubes, salt and white pepper or crushed chillies. Fry 1-2 minutes, add the chopped bell pepper and fry 30 seconds more, then add the cooled rice.
  13. Stir-fry the rice on high heat, stirring constantly. Add the liver and shrimp and fry for 1-2 minutes, then add the spring onions.
  14. Stir-fry the rice on high heat for about 4 minutes, stirring constantly. Serve hot.
