Ingredients

Instructions

  1. Cut the tops off the bell peppers, halve them, remove the seeds, then rinse and cut into strips.
  2. Heat a large deep pan over medium heat with a generous amount of olive oil. Brown the sausages on both sides, prick a few holes in each with a fork, then set aside.
  3. In the same pan, add 4 tablespoons of olive oil and cook the onions. Add 2 tablespoons of water and cook for 3 minutes, stirring occasionally, until they start to soften.
  4. Add the pepper strips with enough oil to coat, stir, cover and cook for 10 minutes. Season with salt and pepper, add a pinch of dried herbs and a splash of water, and mix.
  5. Add a little more olive oil, cover and cook for 15 minutes. Uncover, stir well, cover again and cook 5 more minutes until tender.
  6. Return the sausages to the pan once the peppers and onions are cooked (about 20 minutes total). Cover and bake at 180°C (356°F) for 20 minutes.
  7. Split the bread rolls in half and drizzle olive oil on both cut sides. Top one side of each with provolone, then bake for 2 minutes at 180°C (356°F), until the cheese melts and the bread is lightly golden and crisp.
  8. Spoon the sausage and pepper mixture into each roll, adding a drizzle of oil from the pan.
