Instructions

  1. Mix all the burger sauce ingredients in a medium bowl until combined and set aside.
  2. Cook the chopped bacon in a large skillet over medium-low heat until crisp.
  3. Stir in the sliced onion, season lightly with salt and pepper, and cook until well caramelized. Transfer to a plate.
  4. Shape the ground beef into 4 balls and season them evenly with salt and pepper.
  5. In a large skillet over high heat, spray with oil, add the balls and press them lightly with a spatula into 3/4 inch flat patties.
  6. Cook about 2 minutes per side.
  7. Place two slices of cheddar on each patty in the skillet, add 1/2 tablespoon of water and cover with a lid.
  8. Toast the cut side of the brioche buns in a pan. Spread the burger sauce evenly over all the bun bottoms.
  9. Spread a little of the onion and bacon mixture on the bottom half of each bun.
  10. Place crisp lettuce on the top half of each bun and add a large fresh tomato slice on top of the lettuce.
  11. Lift each patty onto the bottom bun over the onion and bacon, then close with the top bun.
