How To Make The Perfect Brownies: Cakey vs. Fudgy
Ingredients
- Cooking spray
- Flour1 ½ cups
- Dutch process cocoa · powder¾ cups
- Baking powder¾ tsp
- Salt½ tsp
- Sugar1 ⅔ cups
- Butter⅔ cups
- Egg3
- Vanilla1 tsp
- Dark chocolate chip½ cups
Instructions
- Preheat the oven to 300°F (180°C). Grease a 9-inch square metal pan, line it with parchment leaving about 2 inches of overhang on all sides, then grease the paper again.
- Whisk the flour, cocoa powder, baking powder and salt in a medium bowl until evenly combined.
- Beat the sugar and butter on medium-high speed for about 3 minutes until pale and fluffy. Add the eggs one at a time, beating on low after each, for about 3 minutes total until smooth and slightly airy. Beat in the vanilla, scraping the bowl as needed.
- Beat in half the flour mixture on low for about 1 minute. Add the rest and stir with a spatula until combined. Gently fold in the chocolate chips, then spread the batter into the pan and smooth the top.
- Bake for 45 to 50 minutes, until a toothpick inserted in the centre comes out clean with no crumbs. Take out and cool for 10 minutes in the pan.
- Lift the brownies out using the parchment overhang and place on a board. Dust with powdered sugar if you like, then cut into 9 even squares.
