How to make the Perfect Burger at home, according to science.
Ingredients
- Ground beef4
- American cheese2 slices
- Burger bun1
- Bacon1 slice
- Salta sprinkle
- Pickled onion
- Lettuce
- Mayonnaise2 parts
- Horseradish1 part
- Dijon mustard1 part
- Hot sauce1 part
- Honey1 part
- Black pepperto taste
Instructions
- Put the bacon in a cold pan, set the heat to low and cook slowly until crisp on one side, then flip and cook the other side. Set aside.
- Meanwhile, prepare the burger toppings.
- Loosely shape the ground beef into three 56 g balls. Sprinkle the outside generously with salt and roll the balls so the seasoning covers them all over.
- Place the balls on the hot griddle and immediately smash them until thin, a little under ½ inch. Sear for about 30–60 seconds to develop a crust.
- Slide a spatula upside down under each patty to scrape it up, then flip it over. Repeat with the second and third patties. Immediately put a slice of American cheese on two of the patties and stack them into a tower. Turn off the heat.
- Mix all the spicy mayo ingredients in a small container until well combined.
- Toast the bun. Spread sauce on the bottom half, then add shredded lettuce, crisp bacon, the patties, pickled onion, and more sauce on the top bun.
