How to Make the Perfect Steak
Ingredients
- Beef1
- Salt
- Black pepper · ground
- Oil1 tbsp
- Butter3 tbsp
- Garlic2–4
- Thyme
- Garlic powder
- Onion powder
- Cayenne pepper
Instructions
- Take the steak out of the fridge 15 to 30 minutes before cooking so it reaches room temperature.
- Pat the steak dry with paper towel.
- Heat a cast iron skillet over high heat until very hot and lightly smoking.
- Season both sides generously with salt and black pepper just before cooking.
- Add the oil to the pan. If the steak has a fatty edge, hold it fat side down for 30 seconds to render some fat.
- Lay the steak flat in the pan and cook about 3 minutes until a crust forms.
- Flip and sear the other side for another 3 minutes.
- Add the butter, garlic and thyme. Tilt the pan and spoon the melted butter over the steak for 1 minute. Take care, as thyme spatters.
- Turn off the heat and move the steak to a plate or cutting board. Add extra seasoning if desired.
- Rest the steak 5 to 10 minutes, then slice against the grain.
