- Garlic2 cloves
- Parsley½ cups
- Olive oil¼ cups
- Sumac2 tsp
- Lemon1
- Salt1 tsp
Instructions
- Prick the eggplants with a fork. Char them directly over a medium-high gas flame for about 20 minutes, turning every 5 minutes so they cook evenly.

- Put the charred eggplants and peppers in a bowl, cover with plastic wrap and leave for 15 minutes to sweat and cool.
- Peel the eggplants and peppers gently, on a board wearing gloves or under cold running water.
- Finely chop the peeled eggplant and peppers, then add the onion, tomato, garlic and parsley.
- Add 2 tbsp of the olive oil, the sumac, the lemon juice and the salt, and stir to combine.
- Transfer to a serving platter and drizzle with the remaining olive oil.
