- Potato2
- Scallion · sliced¼ cups
- Sour cream2 tbsp
- Butter1 tbsp
- Salt½ tsp
- Black pepper¼ tsp
- Cheese · grated½ cups
- Bacon bit¼ cups
Instructions
- Scrub the potatoes well and prick them all over around the middle, lengthways, with a paring knife.
- Cook until soft all over: microwave on high for 7-8 minutes, or bake at 350°F for 1 hour. Keep the oven at 350°F (or preheat it to 350°F).
- Let the potatoes cool enough to handle, then cut them in half along the middle.
- Scoop out the insides with a grapefruit spoon, leaving a shell about 1/4 inch thick.
- Mash the potato insides with the green onion, sour cream, butter, salt and pepper until smooth.
- Stir in the optional bacon and/or broccoli, and half the cheese.
- Pile the mixture back into the shells.
- If you want crispy skins, rub the shells with a little more softened butter.
- Put the potatoes on a baking sheet and sprinkle the rest of the cheese on top.
- Bake at 350°F for about 20 minutes, until heated through.
