Instructions
- Make the avocado filling: mash the avocado flesh until smooth, then mix in the remaining filling ingredients and set aside.
- For the salsa, cut the tops off the tomatoes, halve them and remove the seeds.
- Put the tomatoes, the other salsa ingredients except the tomato sauce, and 2 cups water in a pot. Bring to a boil over high heat, uncovered, and boil about 8 minutes until the tomatoes and onion are soft.
- Blend until smooth with an immersion blender, or in a blender in batches. If you want a redder sauce, stir in the tomato sauce.
- Warm the tortillas in the microwave for a few seconds or steam them until soft.
- For each serving, place two tortillas on a plate and fill each with 2 tablespoons of avocado mixture. Roll tightly.
- Spread about 1 tablespoon of crema over them, then pour over 1/4 cup or more of the hot salsa.
- Top with a couple of tablespoons of the cheeses, mixed together and crumbled.
