How to Make WHITE LASAGNA Like an Italian...With NO Chicken
Ingredients
- Onion½
- Broccoli1
- Basil1
- Parsley1
- Lasagna500 g
- Ground beef500 g
- Mushroom200 g
- Provolone cheese200 g
- Mozzarella cheese200 g
- Parmesan cheese
- Butter100 g
- Red wine½ cups
- Extra virgin olive oil
- Salt
- Black pepper
- Cream2 cups
- Flour50 g
- Nutmeg
Instructions
- Break the broccoli into small florets and chop the stem. Boil in salted water with the lid on for about 7 minutes, until tender, then drain.
- Heat plenty of olive oil and a splash of water in a large pan over medium-high heat. Sauté the chopped onion for about 5 minutes until softening, stirring often.
- Add a splash of wine, then the sliced mushrooms, butter and chopped parsley. Add the ground beef and break it up as it cooks, mixing until evenly combined.
- Season with salt and pepper. When the beef starts to brown, add the rest of the wine and simmer until the liquid evaporates.
- Add the drained broccoli, mashing it lightly into the mixture without making a puree. Tear in the basil, then turn off the heat and set the filling aside.
- Melt 50 g butter in a small deep pot over medium-low heat. Stir in the 50 g flour until fully combined.
- Add the milk a little at a time, whisking constantly, and keep whisking until smooth and creamy, lowering the heat if needed and working out any lumps as you go.
- Once smooth, stir in a pinch of nutmeg, then turn off the heat and whisk once more until lump-free.
- Spread a thin layer of béchamel in the baking dish. Add a spoonful of filling and top with a lasagna sheet, pressing gently.
- Repeat the layers: béchamel, a generous amount of filling, diced provolone and mozzarella, a little grated pecorino, a drizzle of béchamel, then a pasta sheet. Make the middle layer extra generous and press each layer down. Save plenty of béchamel for the top.
- After the last sheet, press down gently and spread the remaining béchamel edge to edge.
- Cover with foil, keeping it off the sauce, and bake at 180°C / 356°F for 20 minutes.
- Remove the foil, top with provolone, mozzarella and grated pecorino, and bake uncovered at the same temperature for another 10 minutes, until golden and bubbly.
