How to Make ZABAGLIONE - Italian Custard That Tastes Like Heaven
Ingredients
- Egg5
- Sugar70 g
- Frangelico liqueur50–90 ml
- Fresh berries
- Biscuit
Instructions
- Fill a large pot about three-quarters full with water and bring it to a gentle simmer. Check the fit by placing a glass bowl on top: its base should just touch the water. Then remove the bowl.
- Separate the eggs and keep only the yolks. Put the yolks in the bowl off the heat and whisk by hand for about 5 minutes, until they start to lighten in colour.
- Add the sugar in three additions, whisking well after each so it dissolves.
- Set the bowl over the simmering water, making sure it sits securely and does not trap steam. Keep whisking continuously as the mixture cooks gently.
- Keep the water at a gentle simmer, never boiling. Slowly pour in the Frangelico while continuing to whisk.
