Ingredients

Instructions

  1. Grate the zucchini into a bowl, add a sprinkle of cooking salt and leave to rest for 10 minutes.
  2. While the zucchini rests, crack the five eggs into a medium bowl, whisk well, then add salt and pepper and mix again.
  3. Add the self-raising flour, plain flour and pecorino to the egg mixture and mix until well combined.
  4. Squeeze handfuls of the zucchini firmly with both hands to remove all the water, then transfer them to a clean bowl.
  5. Add the squeezed zucchini to the egg mixture and combine.
  6. Heat olive oil in a medium pan, then turn the heat down slightly so the oil does not burn the fritters.
  7. Scoop a heaped tablespoon of the mixture and gently drop it into the oil.
  8. Cook each side for just over a minute, or until golden brown.
  9. Transfer the cooked fritters to a plate lined with paper towels to soak up excess oil.
