How to steam rice π
Ingredients
- Rice10 Β½ cups
Instructions
- Measure the rice with a rice-cooker cup, filling and levelling it, and use the amount you need (for 3 cups, 2ΒΌ cups or 540 ml). Do not scale the recipe up or down.
- Rinse the rice: cover with water and drain immediately. Repeat once.
- Rub the wet rice gently in a circle for 10-15 seconds with minimal water, then rinse and drain. Repeat the wash and rinse two more times.
- Drain well once the water is almost clear, shaking off excess water in a fine-mesh sieve. Do not leave it more than 5 minutes.
- Put the drained rice and water in a heavy pot with a tight lid. For 2ΒΌ cups of rice, use 2Β½ cups (600 ml) water. Soak for 20-30 minutes.
- Cover with the lid slightly ajar and bring to a boil over medium heat.
- Once boiling, reduce to low heat, cover tightly and cook for 12-13 minutes.
- Lift the lid briefly. If the water is not fully absorbed, cover and cook a little longer.
- Remove from the heat and let the rice steam, covered, for 10 minutes without peeking.
- Uncover and fluff the rice with a rice paddle.
