- White pepper¼ tsp
- Sesame oil1 tbsp
- Wonton wrapper12

- Finely chop the 1 pound of shrimp (31/40) by hand with a knife, then mix in the cornstarch, salt, white pepper and sesame oil until well combined.
- Place a wonton wrapper in your palm and scoop in about 1½ tablespoons of filling with a dining or butter knife.
- Press the filling down with the knife while turning the wrapper between your thumb and index finger, so it wraps firmly into an open-top shape.
- Top each siu mai with one small shrimp and a few pieces of minced carrot. Repeat with the remaining filling.
- Lightly brush the bamboo steamer with a dash of oil and arrange the siu mai with a little space between them.
- Bring water to a boil in a large steamer over high heat, set the basket inside, cover and steam for about 5 minutes, until the shrimp is completely cooked through.
- Remove carefully and serve hot.
