Ingredients

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Sift the flour, baking soda, salt and spice into a medium bowl and whisk. Set aside.
  3. In another bowl, stir together the mashed bananas, pineapple with its juice, oil, granulated sugar, brown sugar and vanilla until well combined.
  4. Add half the flour mixture and beat on medium-low speed for about 1 minute, until just combined. Scrape down the bowl, then add the remaining flour and beat for about 1 minute more, without overmixing.
  5. Scrape down the bowl again. Beat in the eggs one at a time on medium-low for 30 seconds each, until fully incorporated. Fold in the pecans with a spatula.
  6. Grease the bottoms of two 9-inch round pans with baking spray and line them with parchment cut to size. Spray the parchment and pan sides, then lightly flour the pans and tap out the excess.
  7. Divide the batter evenly between the pans. Bake for 40 minutes, then test with a toothpick in the centre. If it comes out clean, the cakes are done; if not, bake 5 minutes more.
  8. Cool the cakes in the pans on a wire rack for 15 minutes, then turn them out and cool completely, about 1 hour 15 minutes.
  9. Make the frosting: beat the cream cheese, butter and vanilla on low speed for 2–3 minutes, until just combined.
  10. Gradually add the powdered sugar, about 1 cup at a time, raising the speed to medium. Beat 3–5 minutes, until smooth and fluffy but not wet.
  11. Put 1 tablespoon of frosting on a cake stand and set a cooled cake layer on it. Trim a thin layer off the top with a serrated knife to make it flat.
  12. Spread about one-third of the frosting over the top of the layer, extending about ½ inch past the edge.
  13. Place the second layer on top. Spread the remaining frosting over the top and sides, then sprinkle with pecans if desired.
  14. Store in the fridge for 3–4 days in a covered container. For longer storage, wrap slices in plastic wrap and foil, and freeze in freezer bags for 1–3 months.
