- Flour300 g
- Salt · for the dough, for the sauce35 g
- Olive oil30 ml
- Sugar · for the dough, for the sauce25 g
- Yeast5 g
- Tomato · for the sauce2 cans
- Oregano · dried, for the sauce2 g
- Mozzarella cheeseto taste
- Parmesan cheeseto taste
Instructions
- In a large bowl, mix the bread flour, wholemeal flour, 20 g sugar, dry yeast and 570 ml water until a dough forms.
- Just before turning the dough onto the bench, add the 30 ml olive oil and 25 g cooking salt, then knead briefly to distribute them.
- Knead on the bench for 8 to 10 minutes until smooth. Return the dough to the bowl, cover and refrigerate for 48 hours.
- Take the dough out of the fridge 3 hours before baking. Divide into 260 g portions, roll into tight balls and place them on a greased tray with a lid. Prove at room temperature for 2 to 3 hours.
- Preheat the oven to 400°C (752°F) at least an hour ahead. New York-style pizzas bake at lower temperatures, down to 330°C (626°F), so adjust to what you prefer.
- For the sauce, blend or crush the tinned tomatoes with 10 g salt, 5 g sugar and 2 g dried oregano until smooth, without over-blending.
- Stretch a dough ball to fit your peel or baking surface. Top with the sauce, low-moisture mozzarella and parmesan.
- Bake for 3 to 5 minutes, until the base is crisp and the cheese is golden.
- Rest on a rack over a tray for a couple of minutes before cutting.
