I bet you haven't tried THIS, and you should :) - Marmite Lotus Root
Ingredients
- Lotus root1 ½ lb
- Rice flour90 g
- Flour90 g
- Milk1 cup
- Marmite½ tbsp
- Soy sauce½ tbsp
- Oyster sauce½ tbsp
- Maple syrup1 tbsp
- Sugar1 tbsp
- Sesame seed · toasted
Instructions
- Peel the lotus root, trim the ends and slice each piece into 1 cm rounds.
- Whisk the rice flour and all-purpose flour with 1 cup of plant milk. If the batter is too thick, add 1-2 tablespoons of water. It should be thick enough to coat the lotus with only a little dripping off.
- Heat enough oil in a large pan or wok to 350°F (175°C).
- Dip each lotus slice in the batter and lower it carefully into the hot oil, leaving a small gap between pieces. Fry until golden on both sides, about 3-4 minutes per side, turning with tongs or chopsticks once a crust has formed. Fry a little longer for a deeper colour if you like.
- To air-fry instead, preheat the air fryer to 390°F (200°C) and grease the inner rack with oil. Place the battered slices on it, spray their tops with oil, and air-fry about 10-12 minutes, checking now and then and flipping once, until golden.
- Repeat frying or air-frying until all the lotus root is cooked.
- Whisk the marmite, ½ cup hot water, soy sauce, vegan oyster sauce, maple syrup and sugar until the sugar dissolves.
- Pour the sauce into a pan over medium heat and stir with a spatula until it starts to thicken.
- Add the lotus root and toss quickly to coat. Serve warm with sesame seeds.
