I can't believe how crispy this bread is
Zutaten
- Flour300 g + 3 EL
- Yeast3 g
- Scallion300 g
- Salt½ TL
- Five spice · powder
- Maple syrup2 EL
- Haferdrink1 EL
- Sesame seed
- Vegetable oil4 EL
Zubereitung
- Put the flour in a bowl, sprinkle the yeast over it, and slowly stir in the water with chopsticks until no dry flour remains.
- Knead into a soft dough by hand, cover with a damp towel and a lid, and let it proof for 30–35 minutes until about 1.5 times its size.
- Meanwhile, heat the oil until a chopstick inserted in it bubbles around the tip. Pour the hot oil into the 3 tablespoons of flour and stir into a paste; let it cool slightly.
- Preheat the oven to 245°C (475°F).
- Dust the work surface with flour and roll the dough into a large rectangle about 3 mm thick (about 40 x 25 cm).
- Spread two-thirds of the oil paste over the dough and press the chopped scallions into the middle.
- Fold the bottom layer up over the scallions, then spread the remaining paste and scallions on top. Fold the top over, pinch the edges shut and turn the seam side down.
- Mix the maple syrup with the oat milk, brush over the dough and coat with sesame seeds.
- Cut into 6 equal portions, place them 2.5 cm (1 inch) apart on a baking tray and bake for 12 minutes until golden brown. It is done when it sounds hollow when tapped and is cooked through inside.
