Ingredients

Instructions

  1. Warm the milk to 115°F (46°C), pour it into a large bowl or stand mixer bowl, stir in the yeast and 1 teaspoon sugar, and let it sit 5–10 minutes until foamy.
  2. Add the mashed banana, whole egg and yolk, the 2 tablespoons sugar, 3 cups (375 g) flour and the salt, and stir until well combined.
  3. Mix in the softened butter one tablespoon at a time, stirring until fully incorporated after each addition.
  4. Add more flour as needed until the dough clings together, pulls away from the bowl sides, and is soft and slightly tacky but not sticky (it should tap off a fingertip clean).
  5. Knead until smooth and elastic, adding flour if needed: about 5–7 minutes with a mixer or 10–12 minutes by hand.
  6. Oil a large bowl, add the dough, cover with plastic wrap and leave somewhere warm until doubled, typically 1–2 hours.
  7. Mix the brown sugar, cinnamon, cardamom if using, and the ⅛ teaspoon salt. Grease a 13x9 inch glass or ceramic dish (bake a little less if using metal).
  8. Gently deflate the dough and roll it on a lightly floured surface into a 20x8 inch (50x20 cm) rectangle. Spread the softened butter over it, leaving a ½ inch (1.5 cm) border bare. Sprinkle the filling evenly, pressing it gently into the butter, and scatter diced banana over it if using.
  9. Starting from a long side, roll tightly into a log, pinch the seam closed, and slice into 12 even rolls. Arrange them in the dish in 4 rows of 3, evenly spaced.
  10. Cover and let rise in a warm place about 30 minutes until puffed, while preheating the oven to 350°F (175°C).
  11. Bake on the center rack at 350°F (175°C) for 27–30 minutes, until the tops are light golden and a center second-row roll reads 180°F internally.
  12. Beat the cream cheese and butter until smooth, gradually add the powdered sugar, then stir in the vanilla and milk until smooth.
  13. Let the rolls cool 10–15 minutes in the pan, then spread the icing over each roll.
