I made chocolate mousse out of tofu and it's perfect
Ingredients
- Tofu16 oz
- Chocolate6 oz
- Sugar¼ cups
- Cocoa powder2 tbsp
- Vanilla · paste1 tsp
- Coffee1 tsp
- Salt
- Whipped cream
- Fresh berries
- Mint
Instructions
- Warm the silken tofu to room temperature or slightly warm, to avoid a grainy mousse.
- Melt the semisweet chocolate in a microwave in 30-second bursts, stirring between each, until fully melted. Let it cool slightly. If using a bar, chop it coarsely first.
- Blend the tofu in a food processor with the sifted powdered sugar and cocoa powder, plus the vanilla, instant coffee if using, and a pinch of salt, until completely smooth, scraping down the sides as needed.
- Add the melted chocolate and blend until smooth and fully combined, scraping down the sides as needed.
- Taste and add more sweetener or salt if you like.
- Transfer to a sealable container or several small containers and refrigerate at least 2 hours, preferably overnight, until set.
