I made this FROM SCRATCH and YOU CAN TOO! How to make vegan Mayo + Chickpea "Tuna" Recipe
Ingredients
- Aquafaba · canned¾ cups
- Chickpea1 tbsp
- Lemon3 tbsp
- Dijon mustard1 tbsp
- Avocado oil3 cups
- Salt
- Canned chickpea2 x 400 ml
- Onion½
- Dill20 g
- Scallion1–2 sticks
- Soy sauce1 ½ tbsp
- Toasted sesame oil
- Mayonnaise½ cups
Instructions
- Add the aquafaba, 1 tbsp chickpeas, lemon juice and Dijon mustard to a blender. Blend on high until the chickpeas are liquefied.
- Turn the blender down to medium-low (#3 on a Vitamix) and slowly pour in the avocado oil. The mayo is done when it thickens and can take no more oil.
- Transfer the mayo to a container and stir in salt to taste.
- Add all the chickpea tuna ingredients to a food processor and blend for a few seconds, without over-blending. Add more chickpeas if it is too runny.
