Ingredients

Instructions

  1. In a large bowl, mix the flour, 1 teaspoon salt and the warm water until well combined.
  2. Knead the dough on a floured surface until smooth, then divide it into 4 equal parts.
  3. Roll one part into a thin log and cut it into 6 or 8 pieces, depending on the dumpling size you want. Repeat with the other parts.
  4. Lightly flour a piece, then roll it into a thin circle about 4 inches (10 cm) across. Stack the wrappers separated by small pieces of parchment paper, and repeat with the rest of the dough.
  5. In a medium bowl, mix the cabbage, green onions, garlic, ginger, soy sauce and sesame oil until well combined.
  6. For the pork filling, mix the ground pork, the remaining 1 teaspoon salt, the pepper and 1 cup (125 g) of the cabbage mixture.
  7. For the veggie filling, microwave the mushrooms and carrot for 3 minutes until soft, then stir in 1 cup (125 g) of the cabbage mixture.
  8. For the shrimp filling, mix the shrimp with 1 cup (125 g) of the cabbage mixture.
  9. Put about 1 heaping tablespoon of filling in the center of a wrapper. Brush water on half of the outside edge, fold the wet half over the filling, and pleat the edges to seal. Repeat with the remaining filling and wrappers.
  10. Heat oil in a large skillet over medium-high heat. Add a few dumplings and cook in batches. When the bottoms start to brown, add a splash of water and cover with a lid. Steam for about 5 minutes, until the dumplings are cooked and the water has evaporated. Move them to a paper towel-lined plate to drain.
  11. In a small bowl, stir together the soy sauce, rice vinegar, sesame oil and pepper flakes to make the dipping sauce. Serve the dumplings right away with it.
