I Recreated The Viral Boba Pancakes From Taiwan • Tasty
Ingredients
- Heavy cream¾ cups
- Tea3
- Mascarpone cheese1 oz
- Sugar¾ cups + 6 tbsp
- Boba pearls¾ cups
- Milk1 ¼ cups
- Butter8 tbsp
- Flour1 ½ cups
- Salt1 tsp
- Baking powder½ tsp
- Baking soda½ tsp
- Vanilla1 tsp
- Egg1
Instructions
- Simmer the heavy cream with 1 black tea bag over low heat until it just starts to simmer, about 5 minutes. Move the cream and tea bag to a bowl, let cool to room temperature, then refrigerate covered for at least 4 hours, preferably overnight.
- Boil the boba in a large pot of water. Shake off excess flour first. Stir to separate, then simmer on medium-low, stirring now and then, for about 20 minutes until cooked through. Drain, rinse with cold water, and move to a bowl.
- While the boba cooks, dissolve the muscovado sugar in the water over medium heat, cooking 5–7 minutes until the syrup thickens slightly. Pour over the boba, stir to coat, and let sit about 1 hour.
- Simmer the milk, 4 tablespoons of butter and the 2 black tea bags over medium heat for 10 minutes, keeping it below a boil. Remove the tea bags, squeezing out excess liquid, and let the tea milk cool to room temperature.
- Whisk the flour, sugar, salt, baking powder and baking soda in a large bowl.
- Whisk the cooled tea milk, vanilla and egg yolk in another bowl.
- Fold the wet ingredients into the dry ingredients gently until just combined. Fold in the egg white until just combined, leaving some lumps. Rest the batter 15–30 minutes until thickened.
- Melt 1 tablespoon of butter in a nonstick skillet over medium-low heat. Add about ¼ cup batter when the butter bubbles. Cook about 4 minutes until bubbles appear on the surface, flip, and cook 1–2 minutes more until golden. Repeat, adding butter as needed, to make about 8 pancakes.
- Remove the tea bag from the chilled cream and pour ½ cup into a stand mixer with the whisk. Add the mascarpone and powdered sugar and whip on medium about 1 minute, until just barely thickened and still slightly runny.
- To serve, stack 4 pancakes per serving, spooning about 1 tablespoon of boba and syrup over each layer. Pour half the milk tea cream over the top and garnish with 2 tablespoons of boba. Make a second serving the same way.
