Instructions
- Salt all sides of the steaks generously and set aside. Preheat the oven to 400°F for the broccolini.
- Bring a pot of water to a boil over high heat, then add the orzo and stir now and then so it doesn't stick.
- Trim any woody ends from the broccolini, toss on a sheet pan with a drizzle of oil and a sprinkle of salt, and roast for about 15 minutes, until softened but still with a bite.
- Mince the Calabrian chilies, garlic and parsley. Combine in a bowl with the olive oil and vinegar, season with salt, and adjust to taste.
- Chop the red onion, tomatoes and feta and add to a mixing bowl. Drain the garbanzo beans and add them.
- When the orzo is cooked, drain it and add to the bowl with a few spoonfuls of chimichurri. Mix, then season with salt and more chimichurri to taste.
- Heat a griddle or cast iron pan over high heat for the steaks.
- Dry the steaks with paper towel, place in the hot pan and sear undisturbed for a few minutes. Flip and keep cooking until all sides, including the fat cap, are seared and the internal temperature reads 130°F on a thermometer.
- Rest the steak before serving with the other components.
