I Solved Apple Pies Biggest Problem
Ingredients
- Apple · diced1200 g
- Brown sugar125 g
- Cinnamon6 g
- Salt11 g
- Cornstarch50 g
- Lemon15 g
- Nutmeg · grated1 pinch
- Butter · frozen grated300 g
- Flour400 g
- Sugar40 g
Instructions
- Make the apple filling by tossing the apples with the brown sugar, cinnamon, salt, cornstarch, lemon juice and nutmeg until evenly coated.
- Make the streusel by mixing the flour, brown sugar, cinnamon, salt and pecans with the melted butter until it breaks into pea-sized pieces.
- Make the crust by pulsing the flour, sugar, salt and frozen grated butter in a food processor 4 to 5 times until coarse and gravelly. Add the ice-cold water in two halves, pulsing until evenly spread; the dough should hold together when squeezed.
- Press the dough into a mass, wrap it in plastic wrap and refrigerate for 1 hour.
- Let the dough rest at room temperature for 15 minutes. On a well-floured surface, roll it into a rectangle about 15 x 20 inches (38 x 50 cm), large enough to overhang a half sheet pan. Transfer it to a well-buttered half sheet pan, press into the corners and crimp the edges.
- Dock the bottom of the crust with a fork, then spread the apple filling and all its juices over it evenly. Top evenly with the streusel.
- Bake on a pizza stone or steel in a preheated 375°F / 190°C oven for 45 to 50 minutes.
